As 2012 winds down and we start changing our puppy calendars to the 2013 version, I thought I would start thinking about what I hope 2013 brings and what I hope to accomplish from my bucket list for 2013. I'll just keep adding until I feel like I'm done :) - Finish 100 books - Try a mountain sport - Finish the Grouse Grind in less than 1.5 hours - Travel to a country I've never been before - Write a short story - Watch an NHL game live - Watch an NFL game live - Meet up with cousins in Portland - Master the functions on my camera - Learn to use Lightroom 4 - Finish PM certificate - Fast at least once a month - Finish a devotional from beginning to end - Make a dress from scratch - Buy furniture for the house - Go parasailing - Go to the gun range and shoot a gun - Do the 365 Photo Challenge - Try curling - Play in a poker tournament
Chloe and I are at home today after a busy morning at church - I pretty much slept all day yesterday trying to get over this stupid cold.
Today is day 4 of this stupid cold and it's also supposed to be the day we get together with our friends - now that everyone else's families are growing, the times we get together are fewer and far between. I haven't seen some of our friends for at least 3-4 months and with all the little kids, that is like an eternity!
But with this cold, I thought it would just be better if I stayed home so they at least have a fighting chance at not getting sick so we're at home, missing all the fun, but I guess I get to catch up on my TV that I've been missing that last few months.

Well Christmas has come and gone; as usual we have been spoiled and have an abundance of things that we are very grateful for.
One big thing that I'm excited about, is that there is a very high chance that I'll be starting school online in January. In anticipation for this, we figured a new laptop is in order.
Boxing day special included a HP G6 laptop with an Intel i5, 8GB ram and 1TB HD for $499. Did I mention Windows 8? This is going to take some getting used to but oh my, is this computer beautiful. Perhaps I'll post again once I get used to this software and determine its level of awesomeness.
A big thank you to Johann for daring to go to Future Shop on Boxing Day and picking this up for me; I never would have ventured to a big box store on boxing day.

A snippet of the action from the craziness of Christmas 2012.
In the midst of all the hustle and bustle of the season - let's not forget the true reason for celebration:
10 And the angel said unto them, Fear not: for, behold, I bring you good tidings of great joy, which shall be to all people.11 For unto you is born this day in the city of David a Saviour, which is Christ the Lord.12 And this shall be a sign unto you; Ye shall find the babe wrapped in swaddling clothes, lying in a manger.13 And suddenly there was with the angel a multitude of the heavenly host praising God, and saying,14 Glory to God in the highest, and on earth peace, good will toward men.
Today was supposed to be a regular work day for me but we were lucky and let go at lunchtime - so Vic and I were able to go for a lunch-and-movie date and watched The Hobbit - it was a great movie and brought me back to how much I loved the book too :) Plus it has two of my most favourite actors at the moment from one of my favourite shows - Martin Freeman (Watson) and Benedict Cumberbatch (Holmes) from BBC's Sherlock!
We're back home again and have had a nice evening prepping some food that we're bringing with us to Christmas dinner tomorrow - Potato Extraordinaire and Caramel Apple Cheesecake. Victor was very kind to peel a 10lbs sack of potatoes and was my official potato tester even though I didn't ask him to be. :)
The Potato Extraordinaire recipe is really simple and is always (ALWAYS) a hit (I made two batches for 16 people). Here's the recipe!

Potato Extraordinaire recipe
Serves: 6 (generously)
H/T: 350` to keep warm
Notes: Can be made a day ahead.
5 lbs potatoes (russet)
1 c cream cheese
1 c sour cream
¼ c margarine
1 tbsp onion salt
1 tsp salt
¼ tsp pepper
Butter and paprika for garnish
1. Cook potatoes; drain and mash well
2. Cut cream cheese in pieces; add to potatoes
3. Add all other ingredients and beat well with a mixer (until smooth/fluffy)
4. Place in the casserole dish; dot with butter and sprinkle with paprika
5. Keep warm in oven
We had an early day again today - Vic and I were helping with worship at church and we had dim sum with his dad's side of the family for lunch as our Christmas dinner. It was so nice to see and catch up with Mikey (he lives in Calgary and we see him maybe once or twice a year) and hear that he is doing well! We are both looking forward to more catching up at Christmas dinner with the MacInnes/Da Roza/Adams clan on Tuesday. :)
Johann and Michelle are spending Christmas at her parents on the Island (Vancouver Island) so we had our family Christmas dinner last night - it was so nice to get the family together (no matter how much we drive each other crazy) and celebrate the season together.
We had a great dinner (thanks to Victor and his ever-so-delicious spaghetti carbonara) and dessert (thanks to Johann and Michelle for bringing some tiramisu) and we ended up playing some Phase 10 (our current family game of choice, lol - thanks to Derek and Kim).
